نَابِلُ مَدِينَةٌ فِي شَمَالِ شَرْقِ تُونِسَ. وَفِيهَا كُلَّ سَنَةٍ مِهْرَجَانٌ لِلْهَرِيسَةِ. وَالْهَرِيسَةُ مَعْجُونٌ يَصْنَعُهُ التُّونِسِيُّونَ مِنَ الْفُلْفُلِ الْأَحْمَرِ. هِيَ حَمْرَاءُ، وَطَعْمُهَا حَارٌّ وَحَامِضٌ قَلِيلًا. وَاسْمُ «الْهَرِيسَةِ» مَأْخُوذٌ مِنَ الْفِعْلِ «هَرَسَ»، وَمَعْنَاهُ: دَقَّ الشَّيْءَ. فِي سَنَةِ ٢٠٢٢، وَضَعَتِ الْيُونِسْكُو الْهَرِيسَةَ فِي قَائِمَةِ التُّرَاثِ الثَّقَافِيِّ غَيْرِ الْمَادِّيِّ. وَبَعْدَ ذَلِكَ كَبُرَ الْمِهْرَجَانُ. وَصَارَتِ الْهَرِيسَةُ مَعْرُوفَةً أَكْثَرَ فِي الْعَالَمِ، فَجَاءَ إِلَى نَابِلَ سُيَّاحٌ جُدُدٌ. فِي الْمِهْرَجَانِ، كَانَتْ هُنَاكَ طَبَّاخَةٌ اسْمُهَا شَهِيدَةُ بُوفَايِدْ. شَهِيدَةُ تَصْنَعُ الْهَرِيسَةَ، وَتَزْرَعُ خُضَارَهَا بِنَفْسِهَا. وَجَاءَ نَاسٌ مِنْ تُونِسَ وَمِنْ بُلْدَانٍ أُخْرَى إِلَى مَكَانِهَا، لِكَيْ يُجَرِّبُوا هَرِيسَتَهَا. كَيْفَ تَصْنَعُ شَهِيدَةُ الْهَرِيسَةَ؟ أَوَّلًا، تُجَفِّفُ الْفُلْفُلَ الْأَحْمَرَ فِي الشَّمْسِ. ثُمَّ تُخْرِجُ مِنْهُ الْبُذُورَ، وَتَغْسِلُهُ، وَتَطْحَنُهُ. بَعْدَ ذَلِكَ تَخْلِطُهُ فِي هَاوُنٍ بِالثُّومِ وَالْخَلِّ وَالْمِلْحِ وَزَيْتِ الزَّيْتُونِ وَالتَّوَابِلِ. وَفِي الْمِهْرَجَانِ كَانَتْ أَنْوَاعٌ كَثِيرَةٌ مِنَ الْهَرِيسَةِ. بَعْضُهَا فِيهِ كَمُّونٌ أَوْ كُزْبَرَةٌ أَوْ تَوَابِلُ أُخْرَى، وَبَعْضُهَا مِنْ فُلْفُلٍ مُدَخَّنٍ. وَأَلْوَانُهَا مُخْتَلِفَةٌ: مِنَ الْأَحْمَرِ الْغَامِقِ إِلَى الْأَحْمَرِ الزَّاهِي. تَقُولُ شَهِيدَةُ: «صُنْعُ الْهَرِيسَةِ فَنٌّ. إِذَا أَتْقَنْتَهُ، صَنَعْتَ الْعَجَائِبَ». وَتَقُولُ أَيْضًا: «الْهَرِيسَةُ قِصَّةُ حُبٍّ، وَأَنَا لَا أَصْنَعُهَا مِنْ أَجْلِ الْمَالِ».
Nabeul is a city in the north-east of Tunisia. And every year there is a harissa festival there. And harissa is a paste that Tunisians make from red peppers. It is red, and it tastes hot and a little sour. And the name “harissa” comes from the verb “harasa”, which means: to crush something. In 2022, UNESCO put harissa on the list of intangible cultural heritage. And after that the festival grew. And harissa became better known in the world, so new tourists came to Nabeul. At the festival, there was a cook called Chahida Boufayed. Chahida makes harissa, and she grows her vegetables herself. And people came from Tunisia and from other countries to her stand, to try her harissa. How does Chahida make harissa? First, she dries the red peppers in the sun. Then she takes out the seeds, washes the peppers and grinds them. After that she mixes them in a mortar with garlic, vinegar, salt, olive oil and spices.
