غَارُ الْمِلْحِ بَلْدَةٌ صَغِيرَةٌ فِي شَمَالِ تُونِسَ، قُرْبَ الْبَحْرِ. فِي هَذِهِ الْبَلْدَةِ يَزْرَعُ الْمُزَارِعُونَ الْخُضَارَ فِي الرَّمْلِ. اسْمُ هَذِهِ الطَّرِيقَةِ «الرَّمْلِي»، وَمَعْنَاهُ «عَلَى الرَّمْلِ». وَقَدْ جَاءَ بِهَا الْأَنْدَلُسِيُّونَ إِلَى الْبَلْدَةِ فِي الْقَرْنِ السَّابِعَ عَشَرَ. كَيْفَ تَعِيشُ النَّبَاتَاتُ فِي الرَّمْلِ، قُرْبَ مَاءِ الْبَحْرِ الْمَالِحِ؟ الْجَوَابُ هُوَ مَاءُ الْمَطَرِ. مَاءُ الْمَطَرِ حُلْوٌ، وَهُوَ يَبْقَى فَوْقَ مَاءِ الْبَحْرِ الْمَالِحِ. وَعِنْدَمَا يَرْتَفِعُ الْبَحْرُ وَيَنْخَفِضُ، يَتَحَرَّكُ الْمَاءُ الْحُلْوُ تَحْتَ الرَّمْلِ. فَتَشْرَبُ جُذُورُ النَّبَاتَاتِ هَذَا الْمَاءَ الْحُلْوَ. لَكِنَّ الْمُزَارِعِينَ يَحْسُبُونَ ارْتِفَاعَ الْأَرْضِ بِدِقَّةٍ. إِذَا كَانَتِ الْأَرْضُ مُنْخَفِضَةً جِدًّا، تَلْمَسُ الْجُذُورُ الْمَاءَ الْمَالِحَ. وَإِذَا كَانَتْ مُرْتَفِعَةً جِدًّا، لَا تَصِلُ الْجُذُورُ إِلَى الْمَاءِ، فَتَجِفُّ. لِذَلِكَ يُضِيفُ الْمُزَارِعُونَ الرَّمْلَ وَالسَّمَادَ، لِكَيْ تَبْقَى الْأَرْضُ فِي الِارْتِفَاعِ الْمُنَاسِبِ. يَزْرَعُ الْمُزَارِعُونَ هُنَا الْبَطَاطَا وَالْفَاصُولْيَاءَ وَالْبَصَلَ. وَطَعْمُ هَذِهِ الْخُضَارِ خَاصٌّ، لِأَنَّ النَّبَاتَاتِ تَأْخُذُ الْمَاءَ الَّذِي تَحْتَاجُهُ بِالضَّبْطِ. وَهُمْ يَزْرَعُونَ طُولَ السَّنَةِ، حَتَّى فِي سَنَوَاتِ الْجَفَافِ، بِدُونِ مَاءٍ آخَرَ. تَعْمَلُ الْعَائِلَاتُ فِي هَذِهِ الْمَزَارِعِ الصَّغِيرَةِ، وَيَتَعَلَّمُ الْأَبْنَاءُ الطَّرِيقَةَ مِنْ آبَائِهِمْ. وَهَذِهِ الطَّرِيقَةُ الْيَوْمَ جُزْءٌ مِنَ التُّرَاثِ الزِّرَاعِيِّ الْمُهِمِّ فِي الْعَالَمِ.
Ghar El Melh is a small town in the north of Tunisia, near the sea. In this town the farmers grow vegetables in sand. The name of this method is “ramli”, and it means “on the sand”. The Andalusians brought it to the town in the seventeenth century. How do plants live in sand, near salty sea water? The answer is rain water. Rain water is fresh, and it stays on top of the salty sea water. And when the sea rises and falls, the fresh water moves under the sand. So the roots of the plants drink this fresh water. But the farmers work out the height of the ground carefully. If the ground is too low, the roots touch the salty water. And if it is too high, the roots do not reach the water, and they dry out. So the farmers add sand and manure, so that the ground stays at the right height. Here the farmers grow potatoes, beans and onions.
