فِي سَلْطَنَةِ عُمَانَ جَبَلٌ عَالٍ اسْمُهُ الْجَبَلُ الْأَخْضَرُ. يَرْتَفِعُ الْجَبَلُ بَيْنَ أَلْفَيْ مِتْرٍ وَثَلَاثَةِ آلَافِ مِتْرٍ. الْجَوُّ هُنَاكَ بَارِدٌ فِي الشِّتَاءِ، وَأَحْيَانًا يَنْزِلُ الثَّلْجُ. وَفِي الصَّيْفِ تَصِلُ الْحَرَارَةُ إِلَى ثَلَاثِينَ دَرَجَةً. وَفِي قُرَى الْجَبَلِ حَدَائِقُ وَرْدٍ كَثِيرَةٌ. يُزْهِرُ الْوَرْدُ فِي شَهْرِ مَارِسَ، وَيَبْدَأُ الْقِطَافُ فِي أَبْرِيلَ. يَقْطِفُ النَّاسُ الْوَرْدَ فِي الصَّبَاحِ الْبَاكِرِ أَوْ فِي آخِرِ النَّهَارِ. يَخْتَارُونَ هَذِهِ الْأَوْقَاتَ لِأَنَّ الْجَوَّ يَكُونُ بَارِدًا. يُمْسِكُ الْقَاطِفُ الْوَرْدَةَ مِنْ أَسْفَلِهَا، ثُمَّ يَقْطَعُهَا بِظُفْرِهِ. يَضَعُ الْقَاطِفُونَ الْوَرْدَ الْمَقْطُوفَ فِي قِطْعَةِ قُمَاشٍ كَبِيرَةٍ. ثُمَّ يَحْمِلُونَ الْقُمَاشَ عَلَى رُؤُوسِهِمْ إِلَى مَكَانِ الْعَمَلِ. قَدْ يَحْمِلُ الْقَاطِفُ أَكْثَرَ مِنْ عَشَرَةِ كِيلُوغْرَامَاتٍ مِنَ الْوَرْدِ. وَهُنَاكَ يَتْرُكُونَ الْوَرْدَ تَحْتَ قُمَاشٍ مُبَلَّلٍ، لِكَيْ يَبْقَى طَرِيًّا. بَعْدَ ذَلِكَ يَبْدَأُ صُنْعُ مَاءِ الْوَرْدِ. يَضَعُونَ الْوَرْدَ فِي قِدْرٍ، وَيَضَعُونَ الْقِدْرَ فَوْقَ النَّارِ. يَخْرُجُ مِنَ الْوَرْدِ بُخَارٌ يَصْعَدُ إِلَى أَعْلَى الْقِدْرِ. وَفِي أَعْلَى الْقِدْرِ إِنَاءٌ فِيهِ مَاءٌ بَارِدٌ. عِنْدَمَا يَلْمِسُ الْبُخَارُ الْإِنَاءَ الْبَارِدَ، يُصْبِحُ مَاءً. ثُمَّ يَنْزِلُ هَذَا الْمَاءُ قَطْرَةً قَطْرَةً فِي وِعَاءٍ مَعْدِنِيٍّ. وَمَاءُ الْوَرْدِ قَلِيلٌ: مِنْ كِيلُوغْرَامٍ وَنِصْفٍ مِنَ الْوَرْدِ، يَصْنَعُونَ أَقَلَّ مِنْ لِتْرٍ وَاحِدٍ. عَبْدُ اللهِ وَاحِدٌ مِنْ هَؤُلَاءِ الْقَاطِفِينَ، وَهُوَ مِنْ قَرْيَةِ الشُّرَيْجَةِ، وَعُمْرُهُ سِتُّونَ سَنَةً. بَدَأَ يَقْطِفُ الْوَرْدَ وَهُوَ طِفْلٌ، مَعَ أَبِيهِ. وَمُنْذُ أَكْثَرَ مِنْ خَمْسِينَ سَنَةً، يَقْطِفُ الْوَرْدَ كُلَّ رَبِيعٍ.
In the Sultanate of Oman there is a high mountain called the Green Mountain. The mountain rises between two thousand and three thousand metres. The weather there is cold in winter, and sometimes it snows. And in summer the temperature reaches thirty degrees. And in the mountain villages there are many rose gardens. The roses bloom in March, and the picking starts in April. People pick the roses early in the morning or at the end of the day. They choose these times because the weather is cool. The picker holds the rose at its base, then cuts it with his fingernail. The pickers put the picked roses in a large piece of cloth. Then they carry the cloth on their heads to the place of work. A picker may carry more than ten kilograms of roses. And there they leave the roses under a wet cloth, so that they stay fresh. After that the making of rose water begins. They put the roses in a pot, and they put the pot over the fire. Steam comes out of the roses and rises to the top of the pot. And
